Chicken, Avocado and Mango Sandwich

Ingredients:

  • bun (or 2 slices bread of your choice)
  • chicken breast
  • mango
  • avocado
  • alfalfa sprouts
  • tomato
  • mayo
  • orange juice
  • lettuce leaf
  • salt
  • pepper
  • few drops of lemon or lime

 

Preparation:

Preheat Oven to 350C . Place chicken in baking dish, season with a pinch of salt and pepper. Pour orange juice in baking dish till it covers half height of the chicken breast.Bake till it reaches nice light gold colour (30-40min).

*Mash avocado - cut avocado vertically,take pit out. Use back of your spoon to scoop avocado in layers, bit by bit, making it look like mashed avocado.Add salt, pepper and few drops of lemon or lime. Mix together.

Take a bun (or bread) on one side put mayonnaise and on another put *mashed avocado
Put chicken on cutting board and cut diagonally into strips. Repeat same thing using half of mango instead of chicken breast. Build up sandwich in layers by adding, lettuce, alfalfa and couple of slices of tomato.

Delicious and easy!
