STIR-FRIED PORK WITH GINGER, PEPPERS & RAISINS
Serves 2
2 Tbsp (30mL) olive oil
4 pork loin chops, cut into thin strips
3 garlic cloves, sliced
1 Tbsp (15mL) ginger, finely chopped
½ cup (125mL) raisins
1 red pepper, sliced
1 bunch green onions, chopped
1 cup (250mL) snow peas
2 Tbsp (30mL) soy sauce
2 tsp (10mL) sesame oil
- Using a wok or large sauté pan brown the pork in the olive oil about 2-4 minutes.
- Add the garlic, ginger, raisins, red pepper, snow peas and half the green onions. Continue to sauté another 4 minutes.
- Make a hole in the centre and add the soy sauce and sesame oil. Mix and continue to cook another 2 minutes. Add the remaining green onions.
Low-Fat Option:
- Use chicken instead of pork.
