SWEET POTATO PANCAKES WITH MAPLE SYRUP & CINNAMON
Serves 2
The sweet potato pancakes make a dinner that is not only different but delicious. You can also combine this recipe with any type of fish and serve on top of the pancake.
2 sweet potatoes peeled and cut into chunks
1 small egg-white
¼ cup (60mL) maple syrup
3 Tbsp (45mL) self-rising flour
2 Tbsp (30mL) milk
½ tsp (2mL) cinnamon
½ tsp (2mL) thyme
2 Tbsp (30mL) vegetable oil
½ cup (125mL) sour cream
- Place the sweet potatoes in a large saucepan and cover with lightly salted water. Bring to a boil, cover and simmer for 15 minutes or until tender.
- Drain and mash the sweet potatoes. Cook for 5 minutes. Add the remaining ingredients except the oil and sour cream.
- Heat the oil in a large sauté pan and make the pancakes with large spoonfuls of batter. Flip once, cooking 3-4 minutes on each side. Serve with a dollop of sour cream.
Low-Fat Options:
- Use skim milk.
- Use low calorie maple syrup.
